Ingredients of Chicken Laksa
- 500 gm chicken boneless
- 4 pieces shallots (small onions)
- 2 pieces lemon grass
- 3 cup chicken stock
- 1 teaspoon curry powder
- 100 gm snow peas
- 1 tablespoon lemon juice
- 1 cup chinese noodles
- 1 cucumber
- 1 inch ginger
- 4 cloves garlic
- 3 tablespoon sesame oil
- 2 red chilli
- salt as required
- black pepper as required
- 1/2 cup coconut milk
- 3 spring onions
For Garnishing
- 1 tablespoon coriander leaves
- 1 wedge lemon
How to make Chicken Laksa
Step 1 Start by grinding the ginger, garlic, shallots and lemon grass in a grinder to make a fine paste. Meanwhile, place a pan with water over medium sized flame and add the noodles to it. Let the noodles boil. Once done, strain them and set them aside.
Step 2 Next, heat 2 tablespoons of sesame oil in a large frying pan over high flame and add the chicken to it. Let it cook over high heat and make sure it turns golden brown in color. Once done, transfer it to an absorbent paper and let it cool. In the same pan, heat the remaining oil and add the ground paste to it. Saute them till you can smell the aroma.
Step 3 Next, add chicken stock along with the sliced red chilies and mix them well. Now, add the curry powder, snow peas, salt along with pepper powder and saute them well. Pour the lemon juice along with the coconut milk and let it come to a boil.
Step 4 To serve the Laksa, place boiled noodles in individual serving bowls and add the chicken along with the shredded spring onions, sliced cucumber and chopped coriander and mint leaves. Pour the hot soup over these and garnish it by placing a lemon wedge on the rim of the serving bowl.
